Baking lessons offered by Syrian refugees

REFUGEES who fled Syria will be offering lessons in baking sweets from their homeland.

Proof Bakery, a social enterprise staffed by refugees, will be teaching budding bakers how to make treats from the Middle East.

The classes, held at Arabian Bites on Lamb Street, Coventry, on January 11, will be led by a refugee baker.

She will share baking techniques and recipes from Syria, including baking traditional Syrian ma’amoul – tender semolina pastries filled with cinnamon and a choice of walnuts, pistachios or dates.

The class will also make asabre, buttery date cookies, and then shape them two ways and finish them with a sesame coating.

Using mahleb, a rare spice made from ground cherry seeds, in baking will also be featured, and learners will find out about the modern ma’amoul cookie mould presses common to many Middle Eastern households today.

A take-home baking kit has a jar of fragrant mahleb to use in your future baking endeavours, Syrian cookie recipes, 10-20 ma’amoul and asabre filled cookies, in a range of two to five different shapes and flavours, two ma’amoul cookie moulds in different shapes, each with an easy ejector mechanism, and a custom-printed Proof Bakery shopper bag.

The baking day includes morning tea and lunch, where a refugee baker will tell the story of her experiences.

Proof Bakery will also offer a child ticket (age 8-13) based on past attendee requests. Each child must be accompanied by a responsible adult, and every child must work together with their responsible adult, sharing a table and a kit bag, with additional tools and ingredients available.

Due to space constraints, each responsible adult can have up to three children within the age range with them.

Vegans are catered for but the class is not suitable for gluten or nut allergies.
